Bacon Pasties
- 500 g plain flour, plus extra for dusting
- Pinch None salt
- 30 g sugar
- 2 medium eggs
- 50 g butter, chilled and grated
- 200 ml milk
- 42 g fresh yeast
- 1 tbsp olive oil
- 1 None onion, peeled and chopped
- 400 g streaky bacon, chopped
- Place the flour in a large bowl with the salt, sugar, 1 egg and grated butter.
- Heat the milk to lukewarm, sprinkle the yeast evenly and stir until dissolved. Allow to sit for 5 minutes or until active. Add yeast to the flour mixture and mix with a stand mixer fitted with a dough hook. Mix until a dough forms. Turn out onto a lightly floured work surface and knead until smooth. Leave, covered, in a warm place for 45 mins.
- Meanwhile, heat the oil in a frying pan, add the onion and saute for 3-5 mins, add the bacon and cook for 3-5 mins. Set aside to cool.
- Briefly knead the dough and divide into 4 equal pieces. Split each into 4 more pieces. Roll into balls. On a lightly floured work surface roll out the balls, to create circles of dough. Place the bacon on one half of each pastry circle, leaving a 1/3 inch border. Fold in half and press the edges together with a fork to seal.
- Place the pasties onto sheet trays lined with parchment paper. Cover and leave for 15 mins. Preheat the oven to 400u0b0F. Beat the remaining egg, brush over the pasties and bake for 20 mins. Allow to cool on a wire rack and serve warm.
