Greek Orzo Salad

  1. Cook the orzo in boiling salted water according to the package directions, drain, rinse under cold water then separate the individual pieces with a fork.
  2. Next, whisk the lemon juice and oil together and season to taste. Toss with the orzo and remaining ingredients then set aside to marinate for 30 mins. Serve with pita bread.
