Roasted Salmon With Couscous Crust
- 3/4 cup couscous
- 3/4 cup vegetable stock, hot
- 2 tbsp butter
- 2 tbsp dill, chopped
- 2 None lemons, grated zest and juice
- 4 x 5 oz salmon steaks
- 2 tbsp olive oil
- 1/3 cup mayonnaise
- None None Green beans, to serve
- Preheat the oven to 350u0b0F. Place couscous in a bowl and pour over hot vegetable stock. Add butter, 1 1/2 tbsp chopped dill, lemon zest and juice, reserving 1 tsp each of the zest and juice. Stir well and season to taste. Cover with plastic wrap and let sit for 15 minutes.
- Place the salmon steaks on an oiled baking sheet and spoon the couscous on top. Drizzle with oil and roast for 15 minutes, until the salmon is opaque and cooked through.
- In a small bowl, combine mayonnaise, 1/2 tbsp dill, and 1 tsp each of lemon zest and juice. Stir until well combined and season to taste.
- Serve salmon with lemon mayonnaise and a side of green beans.
