Pears In White Wine With Vanilla Ice Cream And Chocolate Sauce
- 1/2 cups heavy cream
- 2 oz milk chocolate, coarsely chopped
- 1 tsp cocoa powder
- 1 pinch cinnamon
- 3 cups dry white wine
- 3 oz super fine sugar
- 1 None lemon, juiced
- 1/2 cup water
- 1 tsp vanilla extract
- 2 None pears, halved and cored
- 4 scoops vanilla ice cream
- None None chocolate shavings and mint for decoration
- Heat the cream in a small saucepan and add the chocolate, cocoa and cinnamon and cook, while stirring, over a low heat until the chocolate has melted. Take the mixture from the heat and leave to cool.
- Bring the wine, sugar, lemon juice, 1/2 cup water and vanilla extract to a boil in a pot. Add the pear halves to the wine and cook over a low heat for 6-8 minutes. Remove the pears with a ladle and drain them well. Cut the pear halves into a fan-shape, and place a pear half, 1 scoop of ice cream and a little chocolate sauce serve on each of 4 plates. Serve decorated with chocolate shavings and mint to taste with the remaining sauce on the side.
