Breaded Chicken
- 2 None eggs
- 2 cloves garlic, crushed
- 2 tbsp finely chopped fresh flat-leaf parsley
- 1 cup dried breadcrumbs
- 3/4 cup grated Pecorino cheese
- 4 None boneless skinless chicken breasts, cut horizontally1/4 inch-thick slices
- None None Oil, for frying
- None None Salad and lemon wedges, to serve
- Beat eggs and 2 tbsp water in a shallow dish. Beat in garlic and parsley. Combine breadcrumbs and cheese on a large plate and season with salt and black pepper.
- Dip chicken slices, one at a time, in beaten egg mixture, then coat firmly with breadcrumb mixture. Place on a foil-lined baking pan in a single layer. Cover and refrigerate for at least 15 mins.
- Heat the oil in a large skillet on medium-high heat. Cook chicken until golden on both sides and cooked through. Drain on paper towels. Serve hot with salad and lemon wedges.
