Curried Beef, Potato And Cauliflower Hand Pies
- 1 tbsp oil
- 1 None small onion, chopped
- 7 oz ground beef
- 1 tsp curry powder
- 1 None potato, diced
- 4 oz cauliflower florets
- 2.5 oz peas
- 2 sheets frozen puff pastry, thawed
- 1 None large egg, lightly beaten
- None None salad, to serve
- Preheat oven to 400u0b0F. Line a large baking tray with parchment paper.
- Heat oil in a large frying pan over medium heat. Saute onion for 4-5 mins, until tender. Increase heat to high and add ground beef. Brown for 4-5 mins, stirring to break up any lumps. Add curry powder. Cook, stirring, for 1 min. Stir in vegetables and 1/2 cup water. Bring to a boil then reduce heat to low and simmer, covered, for 10 mins, or until potato is tender. Set aside to cool.
- Cut each piece of puff pastry into 4 squares. Divide beef mixture between squares then fold dough over to form triangles. Press edges with a fork to seal. Place on prepared tray and brush with egg. Bake for 15-20 mins, or until puffed and golden. Serve with salad.
