Rhubarb And Ginger Soda Bread
- 1 tbsp butter
- 7 oz rhubarb, trimmed and finely chopped
- 2 1/4 cups self-rising flour
- 1/4 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground almonds
- 2 tbsp finely chopped crystallized ginger
- 1/3 cup plus 2 tbsp sugar
- 1 cup milk, approximately
- Melt butter in small saucepan on medium heat. Cook rhubarb, stirring, for 5 mins, or until rhubarb is just tender. Cool.
- Sift flour, baking soda and cinnamon into large bowl. Stir in almonds, ginger, 1/3 cup sugar and rhubarb. Stir in enough milk to mix to a soft, sticky dough.
- Turn dough onto floured surface; knead until smooth. Divide dough in half. Place halves on greased baking pan. Shape into 6-inch rounds. Mark rounds into 8 wedges. Sprinkle with remaining 2 tbsp sugar.
- Bake for 20 mins or until golden brown and bottom sounds hollow when tapped. Serve damper warm in wedges with butter.
