Last-Minute Roast Turkey
- 2 tbsp butter, plus additional 2 tbsp, melted
- 1 tbsp olive oil
- 1 None red onion, chopped
- 1 slice bacon, finely chopped
- 1 tbsp chopped rosemary leaves
- 2 cloves garlic, crushed
- 3/4 cup fresh breadcrumbs
- 2 None turkey breasts (about 2 lbs)
- None None Red currant jelly, to serve
- Preheat the oven to 400u0b0F.
- Heat butter and oil in a large skillet on medium heat. Saute onion, bacon, rosemary and garlic for 5 mins, until very tender. Add breadcrumbs and cook, stirring, until bread absorbs the butter and is beginning to brown.
- Meanwhile, place turkey breast on a board. Cover with plastic wrap; pound with a rolling pin until 1/3-inch hick. Overlap the long sides, and pound to join.
- Spread stuffing over turkey and roll up tightly. Wrap firmly in parchment paper-lined foil. Place on a baking pan.
- Bake for 15 mins. Remove foil and paper. Brush turkey with melted butter; season to taste. Bake for a further 15-20 mins, until cooked through and golden brown. Let stand, loosely covered with foil, 15 mins. Slice and serve with red currant jelly.
