Picante Turkey Pasta
- 1 1/2 lb. ground turkey
- 1 large onion, chopped
- 1 medium green pepper, chopped (optional)
- 1/2 to 1 c. Pace picante sauce
- 2 (14 1/2 oz.) cans diced tomatoes (undrained) or whole tomatoes (undrained), chopped or stewed tomatoes
- 1 (8 oz.) can whole kernel corn, drained
- 1 to 3 tsp. chili powder
- 2 tsp. ground cumin
- 2 tsp. garlic salt
- 3 c. medium shell pasta or macaroni
- 1 to 2 c. (4 to 8 oz.) shredded Cheddar cheese (optional)
- In a large skillet, cook turkey with onion and green pepper until turkey loses its pink color,
- stirring frequently and breaking up turkey into small pieces.
- Add tomatoes, corn, spices and picante sauce; mix well.
- Bring to a boil.
- Reduce heat; cover and simmer 20 minutes,
- stirring occasionally.
- While turkey simmers, cook pasta according to package directions; drain.
- Stir pasta into turkey mixture; let stand 5 minutes.
- Sprinkle with cheese and serve.
- Makes 6 to 8 servings.
