Satay Chicken With Sesame Choy Sum

  1. Preheat the oven to 400u0b0F. Line a baking pan with parchment paper.
  2. Combine the peanuts, cilantro coconut and lime peel in a small bowl.
  3. Brush the top of each chicken breast with egg white. Dip chicken into peanut mixture, pressing firmly. Place chicken, crusted side up, on the prepared pan.
  4. Bake for 10-15 mins until chicken is cooked through.
  5. Meanwhile, for the satay sauce, combine coconut milk, peanut butter and chili sauce in a medium saucepan. Stir on low heat until combined. Bring to a boil. Reduce heat to low; simmer for 4-5 mins, until slightly thickened.
  6. Blanch choy sum in a pan of simmering water for 1-2 mins. Drain well. Toss in a bowl with sesame oil.
  7. Slice each chicken breast. Drizzle with satay sauce and serve with choy sum.
