Double Chocolate Orange Ice-Cream Sandwiches
- 17.5 oz package double or regular chocolate-chip cookie mix
- 2 tbsp vegetable oil
- 2 large eggs, at room temperature, lightly beaten
- 2 tsp finely grated orange zest
- 3 oz package orange-flavored powdered gelatin
- 8 None scoops vanilla ice-cream
- Preheat oven to 350u0b0F. Line 2 baking sheets with parchment. In a bowl, stir together cookie mix, oil, eggs, and zest until combined. Roll tablespoons of mixture into 16 balls. Place on prepared trays; flatten slightly.
- Bake for 12 minutes (don't overcook or cookies will be too crisp). Let cool on trays for 5 minutes, then transfer to a wire rack to cool completely.
- Combine gelatin and 1 cup boiling water in a medium heatproof bowl; stir until gelatin is completely dissolved. Stir in 3/4 cup cold water. Pour into a 11 x 7-inch pan. Chill for 2 hours or until set.
- Using a 2 1/2-inch pastry cutter, cut 8 rounds from gelatin. Place a scoop of ice-cream on the flat side of 8 cookies. Smooth slightly to form a flat surface. Top each with a jelly round. Sandwich with remaining cookies. Serve immediately.
