Spiced Red Lentil Soup

  1. Bring 3 cups water to a boil in a large saucepan. Drain the lentils and add to the pan along with the turmeric and carrots. Reduce the heat to low; cover and simmer for 15 mins, adding more water if necessary.
  2. Add the tomatoes, onion, ginger and spices. Simmer for 15 mins. Season with salt and ladle into bowls.
