Beef-Eggplant Skillet

  1. Brown beef and onion in a small amount of hot fat.
  2. Sprinkle flour over meat; stir.
  3. Add tomato sauce, water, ground pepper, oregano, chili powder and salt.
  4. Mix well.
  5. Season eggplant with salt and pepper.
  6. Arrange slices over meat.
  7. Cover.
  8. Simmer, until eggplant is tender, about 10 to 15 minutes.
  9. Top with shredded cheese.
  10. Pass Parmesan.
  11. Serves 4.
