Potato And Leek Soup
- 20 g butter
- 2 None onions, diced
- 1 None garlic clove, crushed
- 200 g leek, trimmed and sliced
- 500 g potatoes, peeled and diced
- 400 ml vegetable stock
- 300 ml milk
- 2 tbsp sunflower oil
- 100 ml whipping cream
- Heat the butter in a saucepan, add the onions and garlic and saute for 2-3 mins. Add the leeks and potatoes (set some aside to fry, for garnish) and saute for 1-2 mins. Pour in the stock and milk. Bring to a boil then cover and simmer for 12-15 mins, until tender.
- Meanwhile, heat the oil in a frying pan, add the reserved potato cubes and fry for 8-10 mins, until golden and cooked through.
- Remove the soup from the heat and blend in a food processor. Season and stir in the cream. Divide the soup between 4 bowls and top with the fried potato and a little leek. Serve.
