Pecan Brownies
- 1/2 cup raisins
- 1 1/4 cups self-rising flour
- 1 tbsp baking powder
- 1/3 cup light brown sugar
- 1/4 cup chopped pecans
- 1/2 lb dark or milk chocolate, melted
- 1/4 cup milk
- 1 None egg, beaten
- None None powdered sugar, to dust
- None None cocoa powder, to dust
- Preheat oven to 350u0b0F. Grease and line an 8 inch square cake pan with parchment paper.
- Cover raisins with 1/2 cup boiling water. Microwave on HIGH (100%) for 2 mins. Set aside for 5 mins.
- Meanwhile, sift flour and baking powder into a large bowl. Mix in sugar and pecans. Add chocolate and raisins, along with soaking water. Combine milk and egg then add to mixture, stirring until combined. Transfer to prepared pan and bake for 20-25 mins, until just firm to touch.
- Cut into squares and let cool in pan. Dust with powdered sugar and cocoa powder to serve.
