Italian Burgers With Homemade French Fries
- None None Vegetable oil, for frying
- 2 lbs russet potatoes, peeled and cut into sticks
- 1 1/4 lbs ground beef
- 1 None onion, finely diced
- 1 None egg
- 4 slices mozzarella cheese
- 4 None hamburger buns, split
- 3-4 tbsp ready-made pesto
- None None Lettuce and tomato slices, for serving
- None None Basil leaves, for garnish
- Heat 1 1/2 inches oil to 325u0b0F in a large heavy pot over medium heat. Add the potatoes in batches and fry for 4-5 mins per batch until cooked but not colored. Drain on paper towels. Reserve the oil.
- Mix together the beef, onion and egg and season with salt and pepper. Shape the mixture into 4 large patties. Heat a little more oil in a large skillet over medium-high heat, add the patties and cook for 4-5 mins per side for medium. Top with the mozzarella; cover and cook for 1 min until the cheese has melted.
- Meanwhile, heat the oil to 350u0b0F. Refry the potatoes in batches for 4-5 mins per batch until golden and crisp. Drain on clean paper towels.
- Brush the bottom halves of the buns with a little pesto. Top each with some lettuce and tomato, then a burger and more pesto. Sandwich with the bun tops, garnish with the basil and serve with the French fries.
