Red Velvet Cake With Marshmallow Frosting
- 1/2 c. liquid Butter Buds
- 1 c. sugar
- 1/2 c. brown sugar, packed
- 2 Egg Beaters, beaten
- 6 Tbsp. cocoa mixed with 2 Tbsp. liquid butter Buds (chocolate paste)
- 2 oz. red food coloring (or add water to make 2 oz.)
- 3/4 tsp. lite salt (optional)
- 1 tsp. vanilla
- 1 1/4 c. buttermilk
- 1 3/4 c. sifted cake flour
- 1 1/2 tsp. soda
- Cream liquid Butter Buds, sugars and Egg Beaters.
- Make a paste with 2 tablespoons liquid Butter Buds, cocoa and food coloring; add to creamed mixture.
- Mix buttermilk with lite salt, soda and vanilla.
- Add alternately with flour to cream mixture.
- Beat 3 minutes after this is added.
- Bake in two 9-inch pans that have been sprayed with nonfat cooking spray for 30 minutes at 350u0b0. Remove from oven and cool on a wire rack for a few minutes.
