Chicken And White Bean Stew
- 2 None onions, peeled and finely diced
- 2 cloves garlic, peeled and chopped finely
- 75 g bacon, chopped coarsely
- 1 can (850ml) white beans, drained and rinsed
- 4 None chicken drumsticks
- 3 tbsp sunflower oil
- 500 ml vegetable stock
- 1 can (425ml) chopped tomatoes
- 1 pinch paprika
- 1 tbsp sugar
- 2 tbsp red wine vinegar
- 250 g cherry tomatoes, halved
- 5 stalks marjoram
- Heat the oil in a large pot and saute the chicken drumsticks for 15 mins until golden all over. Remove them and fry the bacon in the hot fat until it's crispy. Set the bacon aside and saute the onions and garlic briefly. Pour in the stock and tomatoes, bring to a boil and season with salt, pepper, paprika, sugar and vinegar.
- Add the chicken drumsticks, beans and bacon to the pot and simmer for 30 mins. 3 mins before the end of cooking, add the cherry tomatoes. Serve the stew sprinkled with marjoram leaves.
