Pork And Hoisin Noodle Stir Fry
- 1 lb dried singapore noodles
- 2 tbsp peanut oil
- 14 oz pork fillets, cut into strips
- 1 None red pepper, seeded and thinly sliced
- 1/4 cup hoisin sauce
- 1 tbsp chili sauce
- 2 tbsp chicken stock
- 1 clove garlic, peeled and crushed
- None None bean sprouts and peanuts to serve
- In a large bowl, soak and separate the noodles according to the packet instructions, then drain.
- In a wok or large frying pan, heat the oil to high. Add the pork and stir-fry in 2 batches, for 1-2 mins each batch, until browned. Remove from the pan and place on a plate.
- Add the pepper to the same wok and stir-fry for 1 min. Combine the sauces, stock and garlic in a small bowl and add to the pan. Stir-fry for 1-2 mins.
- Return the pork to the wok with the noodles and stir-fry for 2-3 mins to heat through. Serve topped with bean sprouts and peanuts, if desired.
