Sirloin Steak With Eggplant, Couscous And Cumin Yogurt
- 1 None lemon, juiced
- 1 tsp ground cumin
- 1/4 tsp allspice
- 1 lb sirloin steak, trimmed
- 6.5 oz couscous
- 1/4 cup fresh mint leaves, chopped
- 1/3 cup fresh parsley, chopped
- 2 None spring onions, thinly sliced
- 2 tsp lemon zest
- 1 None small eggplant, sliced
- None None Cumin Yogurt
- 1/2 cup low-fat plain yogurt
- 1/2 tsp ground cumin
- 1 clove garlic, minced
- 1/4 cup fresh mint, chopped
- Combine 1 tbsp lemon juice and spices. Coat steak then set aside for 15 mins to marinate.
- Combine couscous with 1 cup boiling water. Cover and set aside for 5 mins, until liquid is absorbed. Fluff with a fork. Toss with herbs, onions, lemon zest and remaining lemon juice. Season to taste.
- Preheat grill. Lightly coat eggplant with oil. Grill for 2-3 mins per side, until tender. Cook steak for 3-4 mins per side, until cooked to your liking. Let rest, covered, for 5 mins.
- To make the cumin yogurt, combine all ingredients. Season to taste.
- Slice steak and serve on a bed of couscous with eggplant and cumin yogurt.
