Apple Cupcakes
- 3/4 cup all-purpose flour
- 2 tbsp plus 1/2 tsp packed brown sugar
- 10 1/2 tbsp butter, chopped
- 1/4 cup pistachios, finely chopped
- 2/3 cup sugar
- 2 None large eggs
- 1 1/4 cup self-rising flour
- 3/4 cup buttermilk
- 1 large green apple, peeled, cored, finely chopped
- None None Powdered sugar, to dust
- Preheat oven to 350u0b0F. Grease a 12-cup cupcake pan.
- Place 1/3 cup all-purpose flour and brown sugar in a medium bowl. Rub in 6 1/2 tbsp butter to make fine crumbs; stir in pistachios.
- Using an electric mixer, beat remaining butter and sugar in a large bowl until light and fluffy. Beat in eggs, one at a time, until combined.
- Sift remaining all-purpose flour and self-rising flour over butter mixture. Add buttermilk and apple; stir until well combined.
- Spoon into prepared pan. Sprinkle tops with crumble mixture.
- Bake for 20-25 mins, or until a skewer inserted in the center comes out clean. Cool for 10 mins in pan. Transfer to a wire rack to cool completely.
- Serve dusted with powdered sugar.
