Apple Cupcakes

  1. Preheat oven to 350u0b0F. Grease a 12-cup cupcake pan.
  2. Place 1/3 cup all-purpose flour and brown sugar in a medium bowl. Rub in 6 1/2 tbsp butter to make fine crumbs; stir in pistachios.
  3. Using an electric mixer, beat remaining butter and sugar in a large bowl until light and fluffy. Beat in eggs, one at a time, until combined.
  4. Sift remaining all-purpose flour and self-rising flour over butter mixture. Add buttermilk and apple; stir until well combined.
  5. Spoon into prepared pan. Sprinkle tops with crumble mixture.
  6. Bake for 20-25 mins, or until a skewer inserted in the center comes out clean. Cool for 10 mins in pan. Transfer to a wire rack to cool completely.
  7. Serve dusted with powdered sugar.
