Honey Pork Skewers With Sesame Squash
- 1 1/3 lb diced pork
- 2 cloves garlic, minced
- 1/2 cup soy sauce
- 2 tbsp honey
- 1/4 None winter squash, skin-on, cut into thin wedges
- 5.25 oz green beans, trimmed
- 1 None small red chili, finely chopped
- 2 tsp sesame oil
- 2 tbsp sesame seeds, toasted
- 2 tbsp fresh cilantro leaves
- Thread pork onto 8 skewers. Place in a large baking dish. Whisk together garlic, soy sauce and honey then pour over skewers, turning to coat. Cover with plastic wrap and chill for 1 hour to marinate.
- Preheat grill. Lightly coat squash with oil. Season. Grill for 8 mins, or until tender, turning occasionally. Set aside.
- Lightly coat green beans with oil. Grill for 2 mins, or until tender. Toss with squash, chili and sesame oil. Sprinkle with sesame seeds and 1 tbsp cilantro.
- Cook pork skewers for 10 mins, or until cooked to your liking. Serve squash topped with skewers and remaining cilantro.
