Individual Cherry And Almond Cakes
- 3 None large eggs
- 1/2 cup sugar
- 1 1/4 cups cream
- 3 tbsp unsalted butter, softened
- 2 tsp vanilla extract
- 2/3 cup ground almonds
- 2 cups fresh cherries, pitted
- 2 tbsp sliced almonds
- None None powdered sugar, for dusting
- Preheat the oven to 320u0b0F. Grease 4 shallow 10 oz ovenproof dishes. Place the dishes on a baking tray.
- Whisk 2 eggs in a medium bowl with 1/4 cup of sugar and all the cream until combined.
- Beat butter, vanilla and remaining sugar with an electric mixer until light and fluffy. Add almonds and remaining egg and beat until combined. Add almond mixture to cream mixture and whisk until combined. Pour into prepared dishes.
- Scatter over the cherries and sprinkle with the sliced almonds. Bake for 30 mins, or until just set in the center. Dust with powdered sugar and serve warm.
