Apricot Croissant Bread Pudding
- 2 tbsp butter, at room temperature
- 4 medium croissants
- 3/4 cup apricot jam
- 1 1/4 cups light cream
- 1/2 cup milk
- 2 None eggs, lightly beaten
- 2 tbsp custard powder or vanilla cook & serve pudding mix
- 1 tbsp sugar
- 1 tsp vanilla extract
- None None Vanilla ice cream, to serve
- Preheat the oven to 400u0b0F. Grease an 8-inch square baking dish with butter. Cut croissants lengthwise into thin slices. Spread one side of each slice with jam. Layer slices in prepared dish.
- Place cream, milk, eggs, custard powder, sugar and vanilla in a medium saucepan on medium heat. Whisk until smooth. Cook and stir for 2 mins, or until mixture just comes to a simmer and thickens slightly. Pour custard mixture evenly over croissants.
- Bake for 15 mins, or until golden and custard is just set. Let stand for 5 mins. Serve warm with ice cream, if desired.
