Apricot Croissant Bread Pudding

  1. Preheat the oven to 400u0b0F. Grease an 8-inch square baking dish with butter. Cut croissants lengthwise into thin slices. Spread one side of each slice with jam. Layer slices in prepared dish.
  2. Place cream, milk, eggs, custard powder, sugar and vanilla in a medium saucepan on medium heat. Whisk until smooth. Cook and stir for 2 mins, or until mixture just comes to a simmer and thickens slightly. Pour custard mixture evenly over croissants.
  3. Bake for 15 mins, or until golden and custard is just set. Let stand for 5 mins. Serve warm with ice cream, if desired.
