Mixed Berry And Apple Crumble
- 1/2 cup all-purpose flour
- 3 tbsp brown sugar
- 4 1/2 tbsp butter, diced
- 1 tsp ground cinnamon
- 1/3 cup hazelnuts, chopped
- None None Mixed Berry and Apple Crumble
- 1 lb apple pie filling
- 1 (13.5 oz) can summer berries in syrup, drained, reserving syrup
- 1 tsp ground pumpkin pie spice
- 1/2 cup granulated sugar
- 2 None star anise (optional)
- None None powdered sugar, for dusting
- None None heavy cream, to serve
- Preheat oven to 350u0b0F. Lightly grease 4 - 8 oz ramekins.
- To make the crumble topping, combine flour, sugar, butter and cinnamon in a food processor. Process until mixture resembles breadcrumbs. Add hazelnuts and pulse until finely chopped. Sprinkle on a baking tray and bake for 10-15 mins, until golden, breaking mixture up with a fork twice during baking.
- Meanwhile, combine apple pie filling, berries and spice mix. Set aside.
- In a medium saucepan, combine reserved berry syrup, sugar and star anise. Bring to a boil then reduce heat and simmer for 4-5 mins, until thickened slightly. Remove star anise. Mix gently into apple mixture then distribute between ramekins. Bake for 5-10 mins, until heated through.
- Sprinkle fruit with crumble and dust with powdered sugar. Serve with heavy cream.
