Apple Beignets And Sabayon Sauce
- 3/4 cup all-purpose flour
- 1 None egg + 2 yolks
- 1/2 cup milk
- 5 tbsp clarified butter
- 5 None small apples, cored and cut into 2/3 inch thick slices
- 1/4 cup white wine (e.g., Riesling)
- 1 pinch cornstarch
- 1/4 cup granulated sugar
- 1 tbsp Calvados
- None None powdered sugar, for dusting
- For the apple beignets, sift flour into a bowl, add a pinch of salt, whole egg, and milk and mix into a thick dough. Let rest 10 mins. Working in batches, heat clarified butter, coat apple slices in batter and fry for about 3 mins until golden brown. Set aside and keep warm.
- For the Sabayon sauce, whisk egg yolks, white wine, cornstarch and sugar over a hot water bath. Drizzle in Calvados. Serve apple beignets dusted with powdered sugar and Sabayon sauce on the side.
