Apple Beignets And Sabayon Sauce

  1. For the apple beignets, sift flour into a bowl, add a pinch of salt, whole egg, and milk and mix into a thick dough. Let rest 10 mins. Working in batches, heat clarified butter, coat apple slices in batter and fry for about 3 mins until golden brown. Set aside and keep warm.
  2. For the Sabayon sauce, whisk egg yolks, white wine, cornstarch and sugar over a hot water bath. Drizzle in Calvados. Serve apple beignets dusted with powdered sugar and Sabayon sauce on the side.
