Ginger And Soy Fish With Cilantro Noodles
- 1/4 cup Chinese cooking wine
- 1/4 cup light soy sauce
- 2 tsp sesame oil
- 2 cloves garlic, crushed
- 1 piece (1 1/2 inches) ginger, 1 inch grated, 1/2 inch sliced
- 1 tsp sugar
- 4 None fish fillets, skin on (6-7 oz each)
- 6 oz dried thin noodles, such as somen noodles
- 1 1/2 cups fresh cilantro leaves
- 1 1/2 tbsp peanut oil
- 1 tbsp lime juice
- 1/4-1/2 tsp red pepper flakes
- Combine cooking wine, soy sauce, sesame oil, garlic, grated ginger and sugar in a large shallow dish. Add fish; turn to coat. Cover and refrigerate 15 mins.
- Meanwhile, for the cilantro noodles, cook noodles in a large saucepan of boiling water until tender. Drain, reserving 1/4 cup cooking liquid. Meanwhile, blend or process cilantro, sliced ginger, peanut oil, lime juice and red pepper flakes until mixture forms a paste. Transfer to a large bowl. Add noodles and reserved cooking liquid; toss to coat well.
- Heat an oiled large skillet on medium heat. Cook fish for 2-3 mins on each side, or until cooked through. Serve fish with cilantro noodles.
