Vegetable Soup With Salmon Dumplings

  1. Mix the flour and vinegar with plenty of water and immerse the salsify for 5 mins. Drain and slice.
  2. Bring the bouillon powder and 5 cups water to a boil. Add the salsify, carrots and cabbage and simmer for 15 mins.
  3. For the dumplings, mix the pureed salmon, egg yolk and lemon juice and season. Using 2 small spoons, form the mixture into dumplings and cook in boiling salted water for 3 mins. Drain.
  4. Heat a frying pan and toast the cumin seeds for 2 mins. Stir into the soup and season. Ladle into bowls and add the salmon dumplings. Garnish with dill.
