Vegetable Soup With Salmon Dumplings
- 1 tbsp all-purpose flour
- 6 tbsp white wine vinegar
- 1 lb salsify, peeled and chopped
- 3 tsp vegetable bouillon cube, crushed
- 1 lb carrots, peeled and sliced
- 1 lb savoy cabbage, chopped
- 7 oz salmon fillet, pureed
- 1 None egg yolk
- 1 tbsp lemon juice
- 1 tbsp cumin seeds
- None None fresh dill, for garnish
- Mix the flour and vinegar with plenty of water and immerse the salsify for 5 mins. Drain and slice.
- Bring the bouillon powder and 5 cups water to a boil. Add the salsify, carrots and cabbage and simmer for 15 mins.
- For the dumplings, mix the pureed salmon, egg yolk and lemon juice and season. Using 2 small spoons, form the mixture into dumplings and cook in boiling salted water for 3 mins. Drain.
- Heat a frying pan and toast the cumin seeds for 2 mins. Stir into the soup and season. Ladle into bowls and add the salmon dumplings. Garnish with dill.
