Italian Chicken

  1. Heat oil in a deep frying pan, add the chicken, and cook over a medium heat for 4-6 mins, turning once. Add the almonds and cook, turning, for 1 minute. Reduce the heat and add the onion and garlic, cook for 1-2 mins.
  2. Add the tomatoes, white wine, and 2/3 cup water. Season to taste with salt and freshly ground black pepper and simmer for 6-8 mins.
  3. Stir through the olives and parsley. Serve with crusty bread.
