Bifteki Skewers With Greek Salad
- 4 tbsp white wine vinegar
- 1 tsp dried oregano
- 6 tbsp olive oil
- 1 lb mixed peppers, deseeded and diced
- 1 lb tomatoes, diced
- 3/4 lb cucumber, diced
- 2 None sliced onions, plus 1 diced onion
- 2 oz black olives
- 3 tbsp parsley, finely chopped
- 1 lb ground beef
- 1 None medium egg
- 2 oz breadcrumbs
- Pinch None cinnamon
- 1/4 lb feta, cut into 10 cubes
- Mix the vinegar and oregano together and season. Whisk in 4 tbsp oil. Mix the pepper, tomato, cucumber, 2 sliced onions and olives with the vinaigrette. Set aside.
- Place the diced onion, parsley, beef, egg, breadcrumbs and cinnamon in a mixing bowl and season. Knead until smooth then form into 10 oval-shaped meatballs then flatten them slightly. Thread the cheese onto skewers and form the meatballs tightly around the cheese.
- Heat 2 tbsp oil in a frying pan, add the meatball skewers and fry for 8-10 minutes, turning. Divide the salad and skewers between 4 plates then serve.
