Chili Con Carne Burgers

  1. Bring 2 cups of water to a boil in a medium saucepan. Add the rice and return to the boil. Reduce heat, cover and simmer for about 20 mins until all the water is absorbed. Melt the butter in another saucepan, add the rice and parsley and cook, stirring often, for a few mins. Remove from the heat; cover to keep warm.
  2. Knead together the ground beef, bread, corn, peppers, onion, jalapeno, egg and mustard. Season with salt and pepper, then shape the mixture into eight small patties.
  3. Heat the chili oil in a large skillet over medium heat. Add the burgers and cook for 4-5 mins per side until cooked through. Serve the burgers on a bed of parsley rice.
