Tiramisu
- 3 None egg yolks
- 3/4 cup granulated sugar
- 3/4 cup Marsala
- 1 lb mascarpone cheese or whipped cream cheese
- 3/4 cup heavy cream, whipped to stiff peaks
- 1 cup espresso
- 1/2 lb ladyfinger cookies
- 2 tbsp cocoa powder, for dusting
- For the mascarpone cream, whisk the egg yolks, sugar, and 1/4 cup Marsala in a heat-resistant bowl over a hot water bath until thickened. Remove from the heat and set aside to cool. Add the mascarpone (or whipped cream cheese, if using) then fold in the whipped cream.
- To build the tiramisu, mix the remaining Marsala with the espresso in a bowl. Dip 1/2 the ladyfingers, 1 at a time, in the coffee mixture and place them in the bottom of a rectangular baking dish. Spread 1/2 the mascarpone cream over top then repeat. Chill for at least 6 hours, or overnight. Serve dusted with cocoa powder.
