Chilled Mussels With Orange And Saffron
- 2 lb fresh mussels
- 1/2 cup white wine
- 1 large orange, juice and zest
- 1/4 tsp saffron strands
- 2 tbsp fresh chopped cilantro
- Rinse the mussels under cold running water, discarding any that do not close when firmly tapped. Place in a large pan with the white wine and 2/3 cup water. Bring the liquid to a boil then cover and cook over medium heat for about 5 mins until the mussel shells have opened.
- Drain the mussels, reserving 1/2 cup of the cooking liquid, and remove them from their shells. Discard any that have not opened. Strain the reserved liquid into a bowl.
- Place the orange juice, orange zest, and saffron in a small pan and simmer for 5 mins. Season with salt and freshly ground black pepper and mix with the reserved liquid. Allow to cool then pour over the mussels, cover, and chill for 2 hrs. Divide between 4 glasses and serve garnished with cilantro.
