Cauliflower And Ground Beef Salad
- 1/2 head cauliflower, cut into florets
- 1/2 None courgette, sliced
- 1 None yellow pepper, deseeded and diced
- 150 g cherry tomatoes, halved
- 2 None small red onions, peeled and finely sliced
- 4 stems flat-leaf parsley, chopped
- 2 tbsp canola oil
- 200 g minced meat
- 75 g soured cream
- 2-3 tsp sambal oelek
- 3 tbsp white wine vinegar
- 4 tbsp olive oil
- Blanch cauliflower florets in boiling salted water for 5 mins. Drain.
- Heat 1 tbsp canola oil in a pan. Brown ground beef for 5-6 mins. Season then let cool.
- Heat remaining canola oil in a pan. Saute onions, zucchini, peppers and tomatoes for 4 mins. Season then let cool.
- For the dressing, combine sour cream, vinegar and sambal oelek. Gradually whisk in olive oil and season. Toss with cauliflower, ground beef and vegetables. Sprinkle with parsley.
