Cauliflower And Ground Beef Salad

  1. Blanch cauliflower florets in boiling salted water for 5 mins. Drain.
  2. Heat 1 tbsp canola oil in a pan. Brown ground beef for 5-6 mins. Season then let cool.
  3. Heat remaining canola oil in a pan. Saute onions, zucchini, peppers and tomatoes for 4 mins. Season then let cool.
  4. For the dressing, combine sour cream, vinegar and sambal oelek. Gradually whisk in olive oil and season. Toss with cauliflower, ground beef and vegetables. Sprinkle with parsley.
