Basil Sweet Potato Patties With Tomato And Bean Salad
- 2 None medium sweet potatoes, peeled, coarsely chopped, cooked
- 3 tbsp butter, softened
- 3 tbsp finely chopped fresh basil leaves
- 1/4 cup toasted pine nuts
- 1 clove garlic, minced
- 2 tbsp coarsely grated Parmesan cheese
- 1/3 cup stale whole wheat breadcrumbs
- 2 tbsp olive oil
- None None Tomato and Bean Salad
- 1 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 small head green oak leaf lettuce, leaves torn
- 1 (15 oz) can white beans, rinsed, drained
- 9 oz cherry tomatoes, halved
- 3.5 oz crumbled feta cheese
- 1/4 cup loosely packed fresh basil leaves
- Mash sweet potatoes with butter in a medium bowl. Stir in basil, pine nuts, garlic, cheese and breadcrumbs. When cool enough to handle, shape into 8 patties.
- Heat oil in a large frying pan. Cook patties, in 2 batches, until browned on both sides and heated through.
- To make the salad, whisk together olive oil, white wine vinegar and mustard. Add remaining ingredients and toss to combine. Season. Serve with sweet potato patties.
