Asian-Style Shrimp And Lobster Salad
- None None Dressing
- 1/3 cup lime juice
- 2 tbsp peanut oil
- 2 tsp fish sauce
- 2 tsp brown sugar
- None None Shrimp and Lobster Salad
- 1 lb cooked jumbo shrimp, peeled, deveined
- 4 None small cooked lobster tails, halved, flesh sliced
- 1/2 lb cherry tomatoes, halved
- 1 None mini cucumber, sliced
- 4 None spring onions, shredded
- 1 tbsp mint leaves
- 1 tbsp cilantro leaves
- 1 None small red chili pepper, de-seeded, finely sliced
- 2 oz peanuts, crushed
- None None lime wedges, to serve
- For the dressing, beat together all dressing ingredients in a small bowl.
- Combine shrimp, lobster, tomatoes, cucumber, onion, herbs and chili pepper in a large bowl. Toss with dressing, sprinkle with peanuts and serve with limes on the side.
