Tuna Steaks With Soba Noodles
- 1 tbsp finely grated fresh ginger
- 1/2 None lemon, juiced
- 2/3 lb tuna steaks
- 2 tbsp mirin rice wine
- 1/2 tbsp rice wine vinegar
- 2 tsp tamari soy sauce
- 12 oz soba noodles
- 1 oz fresh cilantro leaves, chopped
- 1 tbsp sesame oil
- 2 tsp freshly ground black pepper
- 2 lbs asparagus, woody ends snapped off, blanched, halved lengthwise
- For the marinade, combine ginger and lemon juice in a shallow bowl. Add tuna and turn to coat.
- For the rice wine dressing, combine mirin, vinegar and tamari soy sauce in a small bowl.
- Cook noodles in a large saucepan of boiling water according to package instructions. Drain and rinse under cold water. Drain again. Combine cilantro, sesame oil and pepper in a large bowl. Toss with noodles to coat.
- Heat a heavy nonstick frying pan on high. Cook tuna 1 min on each side. Remove from heat and cut into thin slices. To serve, arrange noodles on serving plates and top with asparagus and tuna. Drizzle with dressing.
