Orange And Almond Cupcakes
- 8 tbsp (1 stick) butter, at room temperature, chopped
- 3/4 cup granulated sugar
- 1 None orange, peel finely grated
- 1 tsp vanilla extract
- 2 None eggs
- 1 3/4 cups self-rising flour, sifted
- 1/2 cup ground almonds
- 1/3 cup milk
- 1/3 cup orange juice
- 1 pkg (8 oz) cream cheese, softened
- 2 cups powdered sugar
- None None Candied orange slices or colored sprinkles, to decorate
- Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- Beat butter and granulated sugar in large bowl with an electric mixer until light and fluffy. Beat orange peel and vanilla.
- Add eggs, one at a time, beating well after each addition. Fold in combined flour and almonds alternately with combined milk and orange juice, beginning and ending with flour mixture. Spoon evenly into muffin pan, filling each cup two-thirds full.
- Bake for 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
- For the frosting, beat cream cheese and powdered sugar in large bowl with electric mixer until smooth. Spread evenly on cooled cupcakes. Decorate with candied oranges or colored sprinkles.
