Vegetable Sandwiches With Cilantro Salsa
- None None FOR THE CILANTRO SALSA
- 1 bunch cilantro, chopped
- 2 tbsp chopped mint leaves
- 2 tsp grated fresh ginger
- 1 small green chili pepper, seeded and chopped
- 1 tbsp lemon juice
- None None FOR THE SANDWICHES
- 8 slices whole-grain bread
- 2 tbsp butter, at room temperature
- 2 None tomatoes, sliced
- 1/2 small red onion, thinly sliced
- 1/2 None cucumber, sliced
- 1 None carrot, grated
- For the cilantro salsa, combine all ingredients in a food processor. Process until smooth, adding a little water if necessary.
- For the sandwiches, spread bread with butter. Spread 1/2 the salsa on 4 slices. Top with tomato, onion and cucumber. Top with remaining salsa, grated carrot and remaining bread. Cut sandwiches into quarters.
