Chicken, Spinach And Feta Casserole
- 2 1/4 lb potatoes
- 7 tbsp olive oil
- 1 None onion, diced
- 1 clove garlic, finely chopped
- 1 1/2 lb spinach, chopped
- 1 pinch grated nutmeg
- 1/2 lb feta
- 1 1/4 cups creme fraiche or sour cream
- 1 1/4 lb chicken breast
- Cook potatoes in boiling, salted water for 20-25 mins until tender. Drain, run under cold water then cut into cubes. Set aside.
- Preheat oven to 400u0b0F. Heat 2 tbsp oil in a large pan, add onion and garlic and saute for 4-5 mins. Add spinach and nutmeg, cover and simmer for 2 mins. Season. Add potatoes then transfer to a large baking dish. Mix feta, creme fraiche (or sour cream, if using) and 3 tbsp oil, season then spread over top. Bake for 30-40 mins.
- Meanwhile, heat 2 tbsp oil in a pan, season chicken then sear for 5-7 mins until cooked through and golden. Arrange on top of baking dish and serve.
