Blueberry Passionfruit Cheesecake Squares
- 8 oz graham crackers, broken
- 6 tbsp (3/4 stick) butter, melted
- 2 pkg (8 oz each) cream cheese, softened
- 3/4 cup sugar
- 2 tsp finely grated lime peel
- 2 None eggs
- 1/2 cup sour cream
- 2 tbsp lime juice
- 1 cup frozen blueberries
- 1/4 cup passionfruit pulp
- Grease a 12 x 8-inch baking pan; line bottom and long sides with parchment paper, extending the paper 2 inches above the long sides for handles.
- Process the graham crackers until fine crumbs form. Add the butter and process until combined. Press the mixture into the bottom of the prepared pan. Refrigerate for 30 mins.
- Preheat the oven to 300u0b0F. Beat the cream cheese, sugar and lime peel in a medium bowl with an electric mixer until smooth. Beat in the eggs, one at a time. Beat in the sour cream and lime juice. Pour the mixture into the pan. Sprinkle with blueberries and drizzle with passionfruit pulp.
- Bake for about 35 mins or until set. Cool in the oven with the door ajar. Refrigerate for 3 hours or overnight before cutting into squares.
- Store the squares in an airtight container in the refrigerator for up to 2 days.
