Chocolate Rice Pudding With Hazelnut Crust
- 2 cups milk
- 2/3 cup short grain rice
- 1 None egg white, whipped to stiff peaks with a pinch of salt
- 1 None egg yolk
- 1/4 cup sugar
- 1 None orange, zested
- 2 oz orange-flavored dark chocolate, chopped
- 1/4 cup hazelnuts, chopped
- 1 tbsp brown sugar
- Preheat the oven to 400u0b0F. Bring the milk to a boil in a saucepan then add the rice. Cook over low heat for about 35 mins, stirring several times. Pour the rice onto a baking sheet and leave to cool for 20-30 mins.
- Whisk together the egg yolk, sugar and half of the orange zest and stir into the rice. Fold in the whipped egg white followed by the chocolate.
- Mix the hazelnuts and brown sugar. Pour the rice pudding mixture into a greased, ovenproof dish and sprinkle it with the hazelnuts. Bake in the oven for 5-6 mins. Serve immediately garnished with the remaining orange zest.
