Chocolate Rice Pudding With Hazelnut Crust

  1. Preheat the oven to 400u0b0F. Bring the milk to a boil in a saucepan then add the rice. Cook over low heat for about 35 mins, stirring several times. Pour the rice onto a baking sheet and leave to cool for 20-30 mins.
  2. Whisk together the egg yolk, sugar and half of the orange zest and stir into the rice. Fold in the whipped egg white followed by the chocolate.
  3. Mix the hazelnuts and brown sugar. Pour the rice pudding mixture into a greased, ovenproof dish and sprinkle it with the hazelnuts. Bake in the oven for 5-6 mins. Serve immediately garnished with the remaining orange zest.
