Traditional English Christmas Blondies

  1. Preheat oven to 350u0b0F. Grease and line an 8 inch square cake pan with parchment paper. Combine mincemeat and brandy in a small bowl. Set aside.
  2. Cream butter, vanilla and sugar until pale. Add eggs, 1 at a time, beating until combined. Fold in flour and almonds until combined. Fold in mincemeat, chocolate chips and 1/2 cup almonds. Transfer to prepared pan and sprinkle with remaining almonds. Bake for 40 mins, or until a skewer inserted in the center comes out clean. Let cool in pan.
  3. Cut into squares and dust with powdered sugar to serve.
