Traditional English Christmas Blondies
- 8 oz jarred mincemeat
- 2 tbsp brandy
- 15 tbsp butter, softened
- 1 tsp vanilla extract
- 1 cup firmly packed brown sugar
- 2 None eggs
- 1 cup all-purpose flour, sifted
- 1/2 cup self-rising flour, sifted
- 2/3 cup ground almonds
- 3 oz white chocolate chips
- 1 cup sliced almonds, lightly toasted
- None None powdered sugar, to dust
- Preheat oven to 350u0b0F. Grease and line an 8 inch square cake pan with parchment paper. Combine mincemeat and brandy in a small bowl. Set aside.
- Cream butter, vanilla and sugar until pale. Add eggs, 1 at a time, beating until combined. Fold in flour and almonds until combined. Fold in mincemeat, chocolate chips and 1/2 cup almonds. Transfer to prepared pan and sprinkle with remaining almonds. Bake for 40 mins, or until a skewer inserted in the center comes out clean. Let cool in pan.
- Cut into squares and dust with powdered sugar to serve.
