Fried Seafood Platter With Aioli
- 1/3 cup mayonnaise
- 1 clove garlic, crushed
- 2 tsp lemon juice
- None None Vegetable oil, to deep-fry
- 1 1/2 lbs sweet potatoes, peeled and cut lengthwise into thick strips
- 1 1/2 cups self-rising flour
- 1 1/4 cups club soda, chilled
- 1 lb firm white fish fillets, cut into 1-inch strips
- 8 oz calamari rings
- None None Mixed salad, lemon wedges, to serve
- Preheat the oven to 300u0b0F. Line 2 baking pans with parchment paper. For the aioli, whisk mayonnaise, garlic and lemon juice in a small bowl. Cover. Refrigerate until ready to serve.
- Heat oil in a large, heavy-bottomed saucepan on medium heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Deep-fry sweet potatoes, in small batches, for 3 mins, or until just starting to brown around the edges. Using a slotted spoon, transfer to one of the prepared pans. Place in oven to keep warm.
- Meanwhile, sift flour into a medium bowl. Add club soda and stir until smooth.
- Reheat oil in pan on medium-high heat. Dip fish strips, one at a time, into batter. Deep-fry fish, 4-5 pieces at a time, for 3-4 mins, until golden and cooked through. Place on remaining pan. Place in oven to keep warm.
- Dip calamari into remaining batter. Deep-fry, 3-4 pieces at a time, for 2 mins, or until golden. Drain on paper towels. Serve seafood with sweet potatoes, aioli, salad and lemon wedges.
