Potato And Chorizo Bravo
- 1 lb potatoes, peeled, cut in 3/4-inch cubes
- 14-15 oz can chopped tomatoes
- 1 None garlic clove, peeled and crushed
- 1 None small red chili, deseeded and finely chopped
- 1/4 tsp cayenne pepper
- 1/4 cup olive oil
- 7 oz chorizo, sliced
- 1 tbsp fresh chopped parsley
- None None Sea salt to serve
- Cook the potatoes in a large saucepan of boiling, salted water for 5-10 mins, until just tender. Drain well.
- Combine the tomatoes, garlic, chili and cayenne in a saucepan. Heat on low for 2-3 mins, stirring. Season to taste. Keep warm.
- Heat the oil in a frying pan on medium. Fry the potatoes and chorizo for 5-10 mins, stirring occasionally, until golden and crisp. Drain on paper towels.
- Toss the potato and chorizo through the tomato sauce with the parsley. Transfer to a serving bowl. Sprinkle with sea salt.
