Potato And Chorizo Bravo

  1. Cook the potatoes in a large saucepan of boiling, salted water for 5-10 mins, until just tender. Drain well.
  2. Combine the tomatoes, garlic, chili and cayenne in a saucepan. Heat on low for 2-3 mins, stirring. Season to taste. Keep warm.
  3. Heat the oil in a frying pan on medium. Fry the potatoes and chorizo for 5-10 mins, stirring occasionally, until golden and crisp. Drain on paper towels.
  4. Toss the potato and chorizo through the tomato sauce with the parsley. Transfer to a serving bowl. Sprinkle with sea salt.
