Spinach, Pepper And Feta Salad
- 2 None red peppers, halved and seeded
- 2 None whole wheat pita breads
- 5 oz baby spinach leaves
- 4 oz feta cheese, crumbled
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 tsp sesame seeds, lightly toasted
- Preheat the oven to 400u0b0F. Place peppers, skin-side up, on a large baking pan. Spray lightly with no stick cooking spray and season to taste. Roast for 20-25 mins, or until the skin is blackened. Transfer to a heatproof bowl and cover with plastic wrap. Set aside to cool.
- Meanwhile, place the pitas on a baking pan. Bake for 10 mins, or until crisp. Allow to cool. Break into bite-sized pieces.
- Peel the cooled peppers and cut into 3/4 inch-wide strips. Place pepper strips in a salad bowl with the pita, spinach and feta. Drizzle with the combined oil and vinegar. Toss well to combine. Sprinkle with sesame seeds.
