Turkey Burritos
- 1 tbsp olive oil
- 1 None onion, chopped
- 12 oz ground turkey
- 1 None red pepper, seeded and chopped
- 1 tsp chili powder
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 cup chicken stock
- 4 None large flour tortillas, warmed according to pack instructions
- 1/2 None iceberg lettuce, shredded
- 1 None tomato, sliced
- 1/2 cup grated Cheddar cheese
- None None Lime wedges, to serve
- None None FOR THE GUACAMOLE
- 1 None avocado, pitted and peeled
- 1 tbsp lemon or lime juice
- 1 None tomato, finely diced
- Heat oil in large skillet on high heat. Saute onion for 1-2 mins, until tender. Add ground turkey and brown for 3-4 mins, breaking up lumps as it cooks. Add pepper and spices and cook for 1 min. Pour in stock and bring to a boil. Reduce heat to low; simmer for 3-5 mins, until thickened.
- For the guacamole, mash avocado with juice in a small bowl and season to taste. Stir in tomato.
- Spoon turkey mixture evenly on tortillas. Top with lettuce, tomato, cheese and guacamole. Serve with lime wedges.
