Turkey Burritos

  1. Heat oil in large skillet on high heat. Saute onion for 1-2 mins, until tender. Add ground turkey and brown for 3-4 mins, breaking up lumps as it cooks. Add pepper and spices and cook for 1 min. Pour in stock and bring to a boil. Reduce heat to low; simmer for 3-5 mins, until thickened.
  2. For the guacamole, mash avocado with juice in a small bowl and season to taste. Stir in tomato.
  3. Spoon turkey mixture evenly on tortillas. Top with lettuce, tomato, cheese and guacamole. Serve with lime wedges.
