Green Bean Mushroom Casserole
- 1 1/2 lb green beans, trimmed and sliced
- 3 tbsp butter
- 4 oz cremini mushrooms, sliced
- 1 None large onion, sliced
- 1 None large tomato, chopped
- 1 cup roasted garlic Alfredo sauce
- 2 tbsp balsamic vinegar
- 1/2 cup fresh breadcrumbs
- Preheat oven to 400u0b0F. Grease a 2 quart baking dish.
- Blanch green beans in boiling salted water for 2 mins, or until tender. Drain.
- In a large frying pan, melt butter over medium heat. Cook mushrooms and onion for 5 mins, or until golden brown. Transfer to a mixing bowl and toss with green beans, tomato, Alfredo sauce and vinegar. Season. Transfer to prepared dish and sprinkle with breadcrumbs. Cover with foil and bake for 15 mins. Remove foil and bake for another 15 mins, or until browned and bubbling.
