Pasta With Tuna And Tomato Sauce
- 5 tbsp olive oil
- 1 None red onion, chopped
- 1 None red pepper, de-seeded and chopped
- 800 g can chopped tomatoes
- 3 x 185 g cans tuna in oil
- 400 g tortigliono or rigatoni pasta
- 1 None lemon, zested, plus lemon wedges, to serve
- 20 g basil, shredded
- 50 g Parmesan shavings
- None None extra basil leaves, to garnish
- Heat 1 tbsp oil in a saucepan and sweat onion and pepper for 5 mins until softened. Add tomatoes and bring to a boil. Reduce heat to a simmer and cook gently for 15 mins. Drain tuna and add to pan. Cook gently for 5 mins. Season to taste.
- Meanwhile, cook pasta in boiling, salted water for 12 mins or until just tender. Drain, reserving a little pasta water, then return to pan with reserved water and remaining olive oil. Mix well. Add lemon zest, basil and cheese. Add tuna sauce then transfer to serving bowls. Serve with lemon wedges and basil.
