Brioche Rolls

  1. Heat the milk until lukewarm, add the butter and melt. Dissolve the yeast and 1 tsp sugar in 1/4 cup of the warmed milk mixture. Set aside until it begins to foam.
  2. Meanwhile, mix together the flour, 1 tsp salt and 3 tbsp sugar. Make a well in the center and pour in the milk yeast mixture. Mix until smooth then cover and leave in a warm place for 15 mins to proof. Add the remaining milk, egg and orange zest. Knead until smooth then cover and leave in a warm place for another 30 mins.
  3. Preheat the oven to 350u0b0F. Line a baking sheet with parchment paper. Turn the dough out onto a floured surface and divide into 9 equal pieces and then each piece into 3 more pieces. Roll into balls and arrange in triangle shapes on the baking sheet. Cover and let proof for another 15 mins. Brush the dough with evaporated milk and bake for 15 mins. Remove and cool on a wire rack before serving.
